How to Make 阿月浑子冰淇淋 Green – Controlling Chlorophyll

Ever tried making 阿月浑子 冰淇淋? And ended up with 棕色(的) 冰淇淋? Not at all like the vibrant green 阿月浑子 冰淇淋s you’d find in 冰淇淋 shops?

Turns out, creating bright green 阿月浑子 冰淇淋 needs some help from (artificial) colors. 但, if you’re ok with a light green hue, t在这里 are things you can to do bring out the green color, without adding (artificial) colors. All you need is some basic underst和ing of the color of 阿月浑子s 和 叶绿素.


Pistachios are green/yellowish 坚果, related to cashew 坚果. They are native to the Middle East 和 Asia. Since they stem from this region, they can be found in a lot of Middle Eastern sweets 和 dishes, 果仁蜜饼等. Nowadays though, they are also produced outside of that area. California (USA) 和 Italy are both big manufacturers for instance.


Have you ever realized that most 坚果 are 棕色(的)? 花生、腰果、杏仁、 核桃,它们都是棕色的. And yes, 阿月浑子s are also 棕色(的) on the outside. However, once you take away their shells, you may encounter a bright green nut. Just how green depends on the variety. Some are more green than others, but all do have a green/yellow hue to them.

This unique color sets 阿月浑子s apart. It makes it a good c和idate for a range of pastries, 冰淇淋, 和 other snacks. Though of course, their flavor profile helps with that as well.



So w在这里 does this green color come from?

Color of food is determined by the presence of certain types of molecules. These molecules interact with light in such a way that it changes how we perceive it. They absorb 和 reflect light. Generally, these molecules are quite large 和 have special structures that allow them to do so.

The green color is caused by the presence of 叶绿素. Chlorophyll is the driver behind most green colors in fruit 和 vegetables. 西兰花, Brussel sprouts, lettuce, 和 many many more vegetables are all green because of 叶绿素.

Chlorophyll gives plants a bright green color. Unfortunately, it is not very stable. A common reaction to occur is the transformation of 叶绿素 into 脱镁叶绿素. 脱镁叶绿素还是绿色的. However, it no longer is bright green, it’s more of a dull green color.

Pistachios naturally contain both 叶绿素 和 脱镁叶绿素. The ratios depend on the 阿月浑子 nut variety, how it’s been grown 和 stored, 和 more.

Pistachios are a natural product. 因此, they aren’t always identical in color. The concentration of 叶绿素 和 类胡萝卜素 can vary. The region they’re grown in 和 the weather during growing, both impact the color of a 阿月浑子 nut. It also explains why 坚果 from certain regions may be greener than those from other regions.

Aside from region 和 growing conditions, ripeness has a big impact on color. Notice how bananas lose their green color upon ripening? As do apples, (bell) peppers, mangos, 和 tomatoes. This change in color is not necessarily due to new colors forming. Instead, the driving force behind this color change is the breakdown of 叶绿素. When the strong color is gone, the other colors start to shine through. The same happens for 阿月浑子 坚果. Riper 阿月浑子 坚果 are less green than unripe ones.

Added hues from 类胡萝卜素

So what’s ‘hiding’ behind the green in 阿月浑子s?

Most 阿月浑子s aren’t pure green. Instead, they might also have a yellowish hue to them, or even a little orange. This color comes from a group of molecules called 类胡萝卜素. Lutein 和 β-carotene are just two of the 类胡萝卜素 present in 阿月浑子s. Carotenoids also give color to carrots, 和 many more fruits 和 vegetables. They are quite stable 和 not as easily broken down as 叶绿素 is.

Pistachio 冰淇淋, made using the recipe below. 没有一个是亮绿色的. : made from roasted 阿月浑子 坚果, this adds roasted 阿月浑子 flavor but does make 棕色(的) 冰淇淋. 正确的: made from raw 阿月浑子 坚果, this 冰淇淋 has a light green/yellow color to it. Individual pieces of 阿月浑子 in the 冰淇淋 are still green.

How to keep 阿月浑子s green

正如十大网赌排行榜提到的, 叶绿素 isn’t a very stable molecule. High heat, acidity, or just exposure to air can cause 叶绿素 to lose its bright green color. In some instances it turns into a dull green, in other cases, it may lose its color completely.

Chlorophyll breaks down when you heat it for too long. 因此, 阿月浑子s is a surefire way to lose the bright green color.

更重要的是, when 烤 坚果 you add new 棕色(的) 颜色开心果. During 烤, molecules react in the 美拉德反应 which results in not just a 棕色(的) color, but also a lot of flavor molecules.

Chlorophyll is very sensitive to acidic conditions. The acidity speeds up the decay of 叶绿素 into 脱镁叶绿素. On the other h和, slightly alkaline conditions can help preserve the green color. So, stay away from adding strong acids.

Making bright green 阿月浑子 冰淇淋

Even if you’ve selected bright green 阿月浑子s, made sure not to roast them, 并没有添加任何酸, your 冰淇淋 may still be a bl和 green color.

Ice cream simply contains too many other ingredients that mute the color. Milk, cream, eggs, corn starch, all dilute the green color. And you can’t continue to add on more 阿月浑子s. They’ll affect the texture of the 冰淇淋 too much. It may become grainy 和 lose its smoothness.

So, if you really want a bright green 阿月浑子 冰淇淋, add some food colorant. Artificial food coloring generally is a lot more resistant to heat 和 processing. It won’t fall apart as easily as 叶绿素. 更重要的是, 它通常更强, so only a few drops might be enough to create a bright green color!

A simple 阿月浑子 冰淇淋 recipe. Control color by deciding how to treat the 阿月浑子s, or simply add a little extra color.


  • 105g unsalted peeled 阿月浑子 坚果
  • 300克奶油
  • 2蛋黄*
  • 110克砂糖
  • 1,5汤匙玉米淀粉
  • 300克牛奶



  1. 选项1: Want a stronger roasted 阿月浑子 flavor 和 don't care about color too much? Roast the 阿月浑子s in a pan or pre-heated oven (180°C / 350°F for 7-15 min) until they are a light 棕色(的) color. Roasting removes most of the green color!
  2. Option 2: Use the 阿月浑子s as is for a greener color.
  3. Use a (nut) chopper to grind the 阿月浑子s into a smooth paste. Add a little of the cream to help it smoothen out. You want to form a smooth paste to make a smooth 冰淇淋.


  1. Mix the egg yolks, sugar, 和 corn starch in a bowl. 不要跳过这一步! Doing this helps preventing clumping of the corn starch 和 curdling of the egg yolk.
  2. Add milk to a pot 和 gently bring it to a boil.
  3. Slowly pour the hot milk in the egg yolk mixture while whisking continuously.
  4. Pour the mixture back in the pot 和 gently heat while whisking continuously. Continue to heat until it has thickened noticeably 和 formed a custard. Keep in mind that it will continue to thicken when it cools down.

  6. Leave to cool down to room temperature or cool in the fridge for a couple of hours.


  1. Add the 阿月浑子 paste to the cooled-down 冰淇淋 mix.
  2. Use an 冰淇淋 machine to freeze the 冰淇淋, follow the instructions of your machine.
  3. Enjoy your 冰淇淋 immediately, or leave it to harden in the freezer.
